Features: Most commonly consumed while still green, Sudachi is most commonly known as the citrus in Ponzu sauce. While perfect for Japanese cuisine, it also can be used in place of limes and lemons to increase complexity in dishes. The Sudachi is very small, sometimes no bigger than a golf ball. They are most commonly used when green due to a slight bitterness when fully ripe, similar to limes.

Species: Citrus sudachi

Origin: Japan, but cultivated in California

Flavor Profile: Sharp and tangy flavor, very aromatic with lime and bergamot notes.

Season: Green Sudachi season starts September/October and they ripen into the winter
