Features:  Located on a 32 acre farm in Bridgehampton, New York, Brendan Davison cultivates over 30 varieties of Microgreens in his state of the art greenhouses. While living in California, Brendan grew other plant species and became wary of the chemical fertilizer input used in hydroponic growth. He developed a process of greenhouse growth in soil and then transferred that technology into the world of microgreens. The result is a much more flavorful and natural final product versus that of cut hydroponics. The product arrives to the restaurant “living” in trays of soil and ultimately allows chefs to have the freshest product possible.
