Features: Sustainably ranched in Spain, Balfego tuna is caught upon its return to the Atlantic from the Mediterranean after spawning. When caught, it has lost a large percentage of its fat reserves and requires feeding to reach the fattiness needed to sell. Slaughtered to order and never frozen the quality in unparalleled in the seafood world for its freshness. Due to the way Balfego operates fresh tuna is available throughout the year.

Profile: In “maguro,” or Bluefin tuna, the red “akami,” or loin, is as highly regarded and esteemed as the fillet or the sirloin in veal and beef. Best eaten raw as sashimi or in sushi and tuna tartar.  Spanish tuna has a beautiful bright red color and is striking to see in comparison to local and Pacific caught tunas.
