Features: Sustainably ranched in Spain, Balfego tuna is caught upon its return to the Atlantic from the Mediterranean after spawning.  When caught, it has lost a large percentage of its fat reserves and requires feeding to reach the fattiness needed to sell.  Slaughtered to order and never frozen the quality in unparalleled in the seafood world for its freshness.  Due to the way Balfego operates fresh tuna is available throughout the year.

Profile:  Tender, fatty and pink, the tuna belly is one of the most delicious and highly regarded parts of the Bluefin tuna.  Visually defined by its fatty intermuscular marbling, it has the most desirable features of Iberian ham and the finest pork belly meat. It is known as “sorra” in Catalan, “ijada” in Spanish and, of course, as “toro” in Japanese.  The most prized part of the belly, the “otoro,” can be up to 70% fat.
